I made this salmon recipe yesterday for the kids and they actually ate it! Why was I thrilled? Well for one, working full time at home during the lockdown is challenging enough. I have four kids and want to provide them with healthy, delicious food. However, I don’t want to be stuck in the kitchen all day long. The faster I get in and out of the kitchen and get back to my laptop to work I am happy. And when the kids are fed, that makes me very happy too. This recipe was delicious, easy to make and easy clean up. One sheet pan. Hooray!
Ingredients for 4 servings
Wild Caught Salmon about 2-3 pounds
1 large zucchini, chopped
1 cup green pepper, sliced
1 tomato sliced
1 cup broccoli florets
1 handful fresh dill
olive oil, to taste
juice of 1 lemon
salt and pepper, to taste
Preparation
Preheat oven to 400°F (200°C).
-Combine all the vegetables, 1/2 of the dill, olive oil, lemon juice, salt, and pepper. Toss.
-Line one baking sheet with foil (parchment paper will work), place salmon on pan and cover with remaining dill.
-Spread all cut vegetables out on the remainder of the pan
-Bake for 30 minutes or until vegetable roasted, tomatoes burst and salmon flakes easily.
